Grilled Cheese Gourmet Style

It’s Time for Lunch & I Have No Cheese Slices!
I wish I could say that this doesn’t happen all the time, but I frequently am “out of” something! No worries. I simply use what I have on hand. This recipe features cheddar, gruyere and a bit of goat cheese. Tip: When using a block of cheddar cheese, use a potato peeler to get thin slices that melt more easily!
Grilled Cheese Recipe
I will take nothing for granted.
Softened Butter
Bread (2 slices per sandwich)
Cheddar Cheese
Gruyere Cheese
Goat Cheese Crumbles
Using a potato peeler, “peel” cheddar cheese off block, just enough to cover one whole slice of bread per sandwich. Grate the Gruyere cheese. Place bread, buttered side down in skillet over medium heat. Top with peeled cheddar; sprinkle goat cheese crumbles sparingly, here and there; top with grated gruyere and the other slice of bread, buttered side up. Cook over medium heat, turning once, and until lightly browned on each side.
