Belgian Waffles

An Excellent Saturday Morning Pick-Me-Up!
This tried and true recipe comes from my sister. She is quite the chef herself. One waffle fills you up, but I challenge you to just eat one. I don’t even put syrup on mine, just the dusting of powdered sugar. And waffle makers have come a long way. No need to worry about lugging a heavy, bulky piece of equipment out to make waffles. Try the recipe…
Belgian Waffles
2 eggs
1/2 c. melted butter
1 3/4 c. milk
1/2 tsp. vanilla
1 T. sugar
4 tsp. baking powder
1/2 tsp. salt
2 c. flour
Heat waffle maker. Beat eggs in medium bowl until fluffy (with a wire whisk). Add remaining ingredients, one by one. Pour batter onto waffle iron, following waffle iron instructions. Sprinkle with powdered sugar and serve.
