Butterfly Chops W/Cooked Apples

You can cook everything at the same time, and be done in about 30 minutes. Like peanut butter and jelly, pork and apples simply “go together.” My kids will tell you that they don’t like pork, but they love this. The secret is to not overcook the pork. See recipe…
Butterfly Chops w/Cooked Apples
Apples:
4 apples (any kind or a variety- this picture is Fuji)
2 T. butter
1 tsp. cinnamon
1/2 tsp. nutmeg
4 T. brown sugar
1 tsp vanilla
Wash and slice apples as desired. Sometimes I make very thin wedges, and sometimes small chunks. Melt butter in skillet over medium heat, and stir in apples, coating them in the butter. Sprinkle cinnamon and nutmeg over apples while stirring. Then stir in brown sugar and vanilla. Turn down heat to medium low. Stir occasionally, cooking until apples are soft. Meanwhile, cook chops.
Variations: Sometimes, I use almond extract, rum extract instead of vanilla. I also may add sliced almonds.

2 T. butter
Seasoned Salt (I just use Lawry’s®)
Melt butter in large skillet over medium heat. Sprinkle one side of chops with seasoned salt and place salted side down in skillet. Sprinkle top with seasoned salt. Brown each side and turn occasionally, cooking 20 -30 minutes, just until no longer pink inside. Top with cooked apples.
