My Favorite Cheesecake

Texture is Everything!
I love cheesecake, but it’s hard to find a restaurant or store-bought cheesecake that’s worth the calories. The texture is often too whippy. I like a fuller cake-like texture. Although I sometimes whip up a raspberry sauce or something else to put on top, I just love the flavor of this all by itself. Micki’s Fav Cheesecake
Crust
1 package graham crackers
2 T. sugar
4 T. melted butter
Crush graham crackers right in the unopened package. Dump them into a 9″ cake pan and stir in sugar. Add melted butter and toss to coat all crumbs. Press evenly onto bottom and up sides.
Cream Cheese Mixture
3- 8oz. packages of cream cheese
1 c. sugar
3 eggs
1 tsp. vanilla
In a mixing bowl, cream cheese. Add sugar, and cream again. Add one egg at a time, creaming after each add. Mix in vanilla. Pour into crust. Bake @ 350° for 25-30 minutes. Then turn off oven and leave cheesecake in oven for 15 more minutes before removing to cool. This is how I get the texture I love.

This truly is the best “pure” cheesecake….the only accompaniment needed is a great cup of coffee.
