Orange Glazed Prime Rib of Pork

I have to say, politics doesn’t often inspire me to cook, but the whole lipstick on a pig remark got me thinking about pork. This prime rib of pork atop a bed of greens with oranges, cranberries, chow mein noodles & sesame ginger dressing was a wonderful combination of textures and flavors that had the family raving. I actually served the salad on the side for most of the family, and served them some toasted french bread slices with warm brie. I know I always say this, but this is so easy. I actually felt like I was cheating….
Orange Glazed Prime Rib of Pork
Prime Rib of Pork (looks like a pork roast)
3 T. Olive Oil
Seasoned Salt to taste
1/2 Jar Orange Marmalade
Sprinkle seasoned salt lightly and evenly over pork. Heat olive oil in skillet over medium-high heat and sear all sides pork. Remove from skillet and place in baking dish. Spread orange marmalade over the top, cover dish with foil, and bake at 350° for 1-1/2 hours. Spoon juices over top of pork to baste every 30 minutes. Let cool slightly and slice roast. I like to dip the individual slices in the juices before I plate them up. Optional: serve with extra marmalade that you have heated on the side.

- Mixed Greens
- Romaine Lettuce
- Diced Fresh Navel Oranges
- Dried Cranberries
- Chow Mein Noodles
- Slivered or Sliced Almonds
- Red Onion Slices
- Newman’s Own Low Fat Sesame Ginger dressing

Great timing on this recipe….. Let’s see, will I be able to eat this without offending Porky the pig?
Maybe I’ll wimp out and go for the cheese cake! Nice post!
