Sunday Fried Chicken

10 Chicken Legs
2 eggs, slightly beaten
1 wrapper of saltine crackers, crushed
2 T. flour
1 tsp. salt
3/4 tsp. pepper
3/4 tsp. thyme

You’ll want to use 2 skillets for this. Heat 2/3 cup oil in each skillet (or a little more than covering the bottom of the pan). Preheat oven on to 400° for a later step.

Mix crackers, flour, salt, pepper, and thyme in casserole dish.  Slightly beat eggs in a  medium bowl.  Dip chicken pieces in egg, then roll and press into breading mixture, thoroughly coating chicken pieces.  Carefully drop into skillets with hot oil.  Brown chicken two minutes each side until golden brown.

Carefully transfer chicken to 9X13 bakeware, lightly sprinkle each side of chicken pieces with salt, and finish by baking in preheated oven, about 20 minutes.  Chicken is cooked when juices run clear.
