AKA “Fire” . . . Among Other Things

When the kids ask me what I’m making, a lot of times I say “I don’t know.  Something with ____.”  That was the case with this sweet dish.  It has a french toast flavor, with tiny cubes of cream cheese (rolled in cinnamon & sugar) and fresh blackberries.  My teenage daughter said it was “fire,”  and the naming began.  We tossed out names like French Crackberry (uh, no), Blackberry French Toast Cream Cheese Casserole (too long), Brad Pitt (cause he’s so yummy- I still like that one).  Read my recipe…

Blackberry French Toast Bake

1 stick butter, melted
8 slices sourdough bread, cubed

6 eggs
1 c. milk
1/2 c. sugar
1 tsp. cinnamon
1/2 tsp. nutmeg

8 oz. block of cream cheese, cut into 60 tiny cubes
1/4 c. sugar
1/4 tsp. cinnamon

1 c. fresh blackberries

Melt butter in bowl and toss with bread cubes, then dump into greased 9X13 pan.

Whisk together: 6 eggs, 1 c. milk, 1/2 c. sugar, 1 tsp. cinnamon and 1/2 tsp. nutmeg. Pour into 9X13 pan atop the bread cubes.

Mix 1/4 c. sugar and 1/4 tsp. cinnamon in a small bowl and roll the tiny cream cheese cubes in the mixture. Scatter the cubes around the bread cubes. Scatter the blackberries over top.

Bake at 400° for 25-30 minutes.  Serve warm with the syrup of your choosing; maple or blackberry works well.
