Texture is Everything!

Cheesecake

I love cheesecake, but it’s hard to find a restaurant or store-bought cheesecake that’s worth the calories. The texture is often too whippy. I like a fuller cake-like texture. Although I sometimes whip up a raspberry sauce or something else to put on top, I just love the flavor of this all by itself.  What’s best, the recipe is so easy, my friends won’t be calling me from the store because they can’t remember what goes in it.  Read on for recipe…

In case you were worried that I may take myself too seriously…Meet Zachary.

Zachary is 7-1/2.  He told a friend/neighbor last night that her food doesn’t taste as good as mine; she must not cook very much.  She didn’t mind.  Thank God.  But I told her that I have instructed him to be more kind with his opinions after what he said to me the night before.  “Mom, I don’t like my supper.  It made me throw up in my mouth.” Of course, I know and love my little drama queen, so I simply made him something else, which he liked very much.  While he was off playing, I mashed up everything on his plate, threw it in a pot with some leftover mashed potatoes, milk, and cheddar cheese, and called it “potato soup.”

Lazy Dill Potato Salad

Wonder no more. You can, in a pinch. I still haven’t told my family that I used canned potatoes. Why bother? They already ate it all anyway. I would suggest adding a few hardboiled eggs (unless you don’t like them) to add a little more texture. But, I was just too busy and tired to boil, peel and dice potatoes. By the way, the bbq sandwich was almost as easy. I boiled 12 chicken legs until the meat was starting to fall off the bone, peeled off the meat & mixed with Jack Daniels barbeque sauce. In The Crockpot, Why Not?

Banana Bread Pudding

The rapidly ripening bananas were calling me to action, but banana bread seemed too obvious. Stumbling upon the Crockpot Lady, who made a New Year’s Resolution to use her crockpot every day in 2008, I felt compelled to pay homage to this obsessive compulsive cook. And I was so proud of myself until I got to the sauce which I couldn’t just throw in the crockpot. Refusing to use the stove, I whipped up the sauce in a microwavable glass measuring cup.
