Perfect Any Season.


This gourmet chicken salad is sure to impress. Small chunks of lightly seasoned chicken breast, apples, pecans, celery, a touch of onion, and this dish passes my ultimate foodie test: complementary colors, flavors and textures. Depending on my mood, I will serve over a bed of lettuce, on a croissant or Aunt Millie’s Nine Grain bread. Recipe follows…

Gourmet Chicken Salad

4 chicken breasts cooked in 4 T. butter
2 stalks celery, chopped finely
3 apples, chopped
1/4 c. onion, chopped finely
2/3 c. mayonnaise
1/4-1/2 tsp. celery salt
1/2 c. chopped pecans

Melt butter in skillet, add chicken breasts, seasoned on both sides with Lawry’s seasoned salt. Cook until juices run clear, making sure to not overcook. Chicken breasts will still be juicy. Let cool and cut into 1/2″ cubes.

In a large bowl, dump cut up chicken, apples, celery & onion. Toss together. Stir in mayonnaise, then celery salt. Stir in pecans last.  Makes about 6 cups.  Can be served immediately.  Try it with my Potato Leek Soup.
