Microwaves in a Mug in 3 Minutes or Less

Chocolate cake for one or two is quick and easy with this recipe. Want to do something special for a friend or co-worker, but not have a lot of time? Hate having a bunch of leftover birthday cake? Have an immediate need for chocolate? Here is a cure-all recipe. This chocolate cake took one minute and thirty seconds to cook in my microwave. The original recipe was forwarded to me by Barb, my daughter’s choir teacher, one of those viral email recipes, I think. Quick Chocolate “Cup” Cake
4 T. flour
4 T. sugar
2 T. cocoa
1/8 tsp. salt
1/8 tsp. baking powder
1/8 tsp. baking soda
1 egg
1 T. mayonnaise
3 T. oil
3 T. milk
1/8 tsp. vanilla
In a large mug, combine all dry ingredients (first six) until well blended. Add egg and mayonnaise and blend well. Add oil and blend, then blend in milk & vanilla. Put mug in microwave and cook for 1-1/2 to 3 minutes (depending on your microwave). Turn out onto plate and decorate as desired.
Minute Chocolate Frosting
2 T. butter
1/2 c. powdered sugar
1 tsp. cocoa
1/2- 1 tsp. milk (depending on desired consistency)
1/8 -1/4 tsp. instant coffee (depending on desired flavor)
Melt butter in measuring cup in microwave. Stir in powdered sugar with a fork until blended, then add cocoa and stir again. Add milk and then coffee granules, and stir.
