Homemade Chicken Dumplin Soup

STEP ONE
Homemade Dumplins
1-1/2 c. flour
1 tsp. salt
1 egg
1/4 c. milk

In a mixing bowl, stir together flour and salt. Make a well in middle and put egg and milk in center, mixing with hands. Mix in the flour mixture from the edges until all the crumbs are incorporated into the dough. The dough ball will be tough and elastic. Roll out on a floured surface to 1/8″ thickness, and cut into small squares.

STEP TWO

Put 10 cups of water into a stockpot and place on stove on medium-high. Add 3 T. chicken bouillon granules and bring to a boil. Drop in dumplings.

STEP THREE

1 c. chopped celery
1 T. dried minced onion
6 baby carrots, sliced

TIP: Slicing in easy with a mandoline slicer. Sauté onion, celery and carrots in 2 tablespoons of melted butter for 2 minutes.  Then add to stockpot.

STEP FOUR

2 large, cooked boneless, skinless chicken breasts, lightly seasoned and cut into small cubes
1/2 tsp. basil leaves
1/2 tsp. poultry seasoning

Add chicken breast cubes, basil and poultry seasoning to stockpot and continue to boil, stirring occasionally for 30 minutes, until dumplings reach desired tenderness.
