Skillet Chips

The Perfect Side is Minutes Away.

My husband loves kettle chips, and they are amazingly simple to make right in your skillet. You don’t need a lot of oil. You don’t have to peel any potatoes. And with the Oxo Good Grips Hand-Held Mandoline Slicer, perfect potato slices are quick and easy. I used Yukon Gold potatoes because that’s what I had on hand. I rinsed them leaving the skin on, sliced them on the thinnest setting #1 of the Oxo Good Grips Hand-Held Mandoline Slicer
, and put them in my Copper Advantage Copper Base 12-Inch Skillet With Helper Handle
with heated oil 1/4″ deep. Then I fried them a couple of minutes on each side until crisp. After cooking, I placed them on a paper towel-lined sheet and sprinkled with salt.

Okay, those chips looks absolutely scandalous! I think I’ll need some home made french onion dip to go with them….

Sound very easy. I’ll try to make it.

Very easy. I love my mandoline! I cook things I wouldn’t otherwise try because of it. Mine was a gift from my friend, Katie at Cooking Little(http://www.cookinglittle.com). She also gives commentary on the mandoline in one of her posts, http://www.cookinglittle.com/blog/2008/06/handheld-good-grips-mandoline.html

Update! I bought myself a new deep fryer which makes cooking these a lot easier and quicker for making a ton of chips…I have to make a ton every time because these are a family favorite.
