Mug O’ Banana Bread

Another Microwave Miracle!
I had one banana. The baby wanted half of it, and of course, I couldn’t let the other half go to waste! Why just eat the other half when you can have banana bread in a couple of minutes?! Moist and delicious, this is a must try, so click on over to the recipe!
4 T. flour
2 T. sugar
2 T. brown sugar
1/8 tsp. salt
1/8 tsp. baking powder
1/8 tsp. baking soda
1 egg
2 T. vegetable oil
1/2 mashed banana
1 T. chopped pecans (optional)
In a large microwaveable mug, fully blend flour, sugars, salt, baking powder & baking soda. Add egg until all the dry ingredients are incorporated. Stir in oil, then banana, then nuts. Pop into the microwave 1-1/2 minutes to 3 minutes, depending on your microwave. (Just don’t overcook when you are cooking in the microwave, or you’ll have sponge cake.)

Micki–I love this recipe! I am definitely going to try it. I haven’t really cooked much using my microwave but I do like microwave cooking (it satisfies my immediate gratification need–lol). Thanks for posting it.

This was really good. I had a small banana and I felt guilty after I read that you gave half to your baby so I did the same.. I wish I had put the who;e thing in there! This was really good and I will make again. My husband doesn’t like banana bread and I love it, so this is PERFECT! Thanks

i added mini chocolate chips and a whole banana to mine and when it was done added a powdered sugar glaze over the top, it was a fantastic and satisfying quick treat without a huge mess from baking
