When You Just Can’t Eat Anymore Mashed Potatoes


I love Thanksgiving leftovers because of the many new dishes I can make with them. Mashed potatoes don’t always make the best leftover, but mashed potato soup does! Experiment throwing in different ingredients based on what you have in your cupboard. See this recipe… (more…)

Inspired By My Life.

What’s up?  Micki only feeding her family dessert these days?  As you can see by my recent posts, with the holidays, I am on a sweet kick. But I have also been writing a series of children’s books called “So Susie.” Inspired by working from home while taking care of a toddler; I always have a story to tell.  Well, that and my stepdaughter, a very talented artist/illustrator needed some work.   We’re almost done with the first book “Time To Eat.”

In this book, Susie is a big girl, who demonstrates her table manners, then teaches them to her baby doll.  I have also written “Time For Preschool” where Susie is afraid to leave mommy but ends up loving it & playing “school” with her baby doll.  And in “No More Binky,”  Susie learns that when babies get bigger, their pacifiers “break.”

Bring The Dessert!

Going somewhere for Thanksgiving? Why not bring dessert? Easier than pie, the crust is a shortbread crust that doesn’t overpower the flavor of the pecan filling. It’s a great make-ahead dessert as it tastes even better the next day. It is warm in this picture.  It actually looked better after it cooled, but by that time, it was gone & I couldn’t get another picture! Recipe follows… (more…)

The Best of Both Treats.


I love pumpkin pie, and I love cheesecake, so I wanted to layer the flavors as opposed to mixing them. I wasn’t sure it would work out because of density differences, but I couldn’t be happier with the results. I put down the cheesecake layer, then poured the pumpkin pie mix over top. After about 15 minutes in the oven, the cheesecake mixture started to pop up, so I took a knife and swirled the very top. As you can see, I ended up with a layer of cheesecake, a layer of pumpkin pie, and a mixed layer on top. Read on for recipe… (more…)
