Pecan Pie Bars

Bring The Dessert!

Going somewhere for Thanksgiving? Why not bring dessert? Easier than pie, the crust is a shortbread crust that doesn’t overpower the flavor of the pecan filling. It’s a great make-ahead dessert as it tastes even better the next day. It is warm in this picture. It actually looked better after it cooled, but by that time, it was gone & I couldn’t get another picture! Recipe follows…
Pecan Pie Bars
Shortbread Crust
1 c. flour
1/2 c. packed brown sugar
1/2 c. chopped pecans
1/3 c. softened butter
Mix all ingredients by hand in 9 X 13 pan (or in mixing bowl with beaters) until all dry ingredients are fully incorporated. Press into the bottom of the 9 X 13 and bake in a 350° oven for 10 minutes.
Meanwhile, in a mixing bowl, whisk together the filling ingredients (except pecan halves):
2 T. flour
1/2 c. packed brown sugar
3 eggs
1 c. light corn syrup
1 T. maple syrup
1/2 tsp. vanilla
1/2 c. – 1 c chopped pecans
(pecan halves to lay over top, 1/2 – 1 cup)
After combining all ingredients, pour over partially baked crust, and top with pecan halves as you would a pecan pie. Bake an additional 15 minutes @ 350°. Remove from oven & let cool on wire rack. Cut into squares after cooled.
