When You Just Can’t Eat Anymore Mashed Potatoes

I love Thanksgiving leftovers because of the many new dishes I can make with them. Mashed potatoes don’t always make the best leftover, but mashed potato soup does! Experiment throwing in different ingredients based on what you have in your cupboard. See this recipe…
Leftover Mashed Potato Soup
1 c. celery, sauteed in 2 T. butter
2 T. minced onion
3 c. half & half or milk
1/2 tsp. pepper
3 c. mashed potatoes
3 c. shredded sharp cheddar cheese
bacon bits, sour cream, shredded cheese for garnish
In a large stockpot, saute celery in butter. Add minced onion, pepper, and half & half (or milk). NOTE: adjust amount of liquid to give your desired consistency. Stir in mashed potatoes and heat over medium heat until hot. Stir in cheese until it melts. Serve with a dollop of sour cream and a sprinkling of bacon bits & cheddar cheese.
