White Chocolate Pecan Chip Cookies

A Winning Combination.
White chocolate chips and macadamia nuts make for a great cookie. But, this combination is equally yummy. I had the white chocolate chips leftover from Susie’s birthday cake & I always have pecans on hand, and I almost always have a sweet tooth.
White Chocolate Pecan Chip Cookies
Wet Ingredients:
1/3 c. shortening
1/3 c. butter
1/2 c. sugar
1/2 c. packed brown sugar
1 egg
1 tsp. vanilla
Dry Ingredients:
1-1/2 c. flour
1/2 tsp. baking soda
1/2 tsp. salt
Add last:
6 oz. package white chocolate chips
1/2 c. pecan chips
Cream shortening, butter and sugars together until well incorporated. Add egg and vanilla. In a separate bowl, mix dry ingredients.
To measure flour, scoop flour into your measuring cup, level with a knife, and pour into bowl. Add remaining dry ingredients and stir well with fork or whisk. Slowly stir the dry ingredients into the wet. By hand, stir in the white chocolate chips and pecans then drop dough by tablespoon onto ungreased cookie sheet. Bake at 350° for 10 minutes, until lightly golden brown. Makes 2-1/2 dozen cookies.
