Beef Manhattans

Cozy Crockpot Cooking!

Somehow, I didn’t have any bread in the house, but I did have hamburger buns. Their slightly sweet flavor made this one of my favorite beef manhattans. The crockpot cooked the beef all day, and the most laborious part of the meal was the mashed potatoes. I’ll take that any day. Recipe follows…
Beef Manhattans
1 beef rump roast
1 package Onion Soup mix
2 lb. box Emeril’s Beef Stock
2 c. water
Combine the soup mix, beef stock and water in a 4 qt. crockpot. Slip in the roast and cook on high all day, eight hours or so, on high.
Brown Gravy
Put 2 T. flour in a small bowl, scoop out 1/4 c. of the broth from the crockpot and stir it into the flour, until smooth. Add another 1/4 c. of broth and stir. Pour into a saucepan and add another 1-1/2 c. broth from crockpot. Cook over medium heat until desired consistency is achieved.
Place pieces of beef on buns (or bread), smother with gravy. Scoop some mashed potatoes into the center and load up with more gravy.
