Delicious and Satisfying.

This sandwich is so good, I might even eat it for breakfast! It is reminiscent of a gourmet delicatessen club, but way more economical. Chipotle mayonnaise, mixed greens, tomato, red onion, and a sprinkling of cheddar cheese atop deli turkey and bacon on parmesan focaccia bread is one of my most promising concoctions. Turkey Chipotle Club

Parmesan focaccia bread
1 lb. very thinly sliced turkey
8 thick slices cooked bacon
Mixed Garden Greens (in a bag)
4 tomato slices
Thinly sliced red onion
4 T. sharp shredded cheddar cheese
4 T. chipotle mayonnaise (Mix 1/3 c. mayonnaise & 1-1/2 tsp. Grill Mates Cinnamon Chipotle Rub)

Cut round focaccia bread into quarters with vertical cuts, then slice each quarter horizontally in half to make top and bottom buns. Place 1/4 lb. of turkey on each bottom bun and top each with with 2 slices of bacon, 1 T. cheese, onion, lettuce, tomato. Spread 1 T. chipotle mayonnaise on bun top and place over bottom buns.

(If you want a warm sandwich, assemble with the turkey, bacon, cheese and plain bun first & heat on high in microwave for 30 seconds at a time. Then remove the top bun & spread on the mayonnaise and remaining toppings.)
