Let Me Eat Cake!


Cold weather and boredom prompted a quick tea party.  Susie and I had a blast & you were lucky if she let you have any cookies.  When the older kids got home from school, they couldn’t sneak a cookie without a fuss.  If you wanted a cookie, you had to play tea party.  Fortunately, it doesn’t take much time to whip up a quick batch of 16 cookies.  See recipe

Russian Teacakes

1 c. softened butter
1/2 c. powdered sugar
1 tsp. vanilla
2-1/4 c. flour
1/4 tsp. salt
1/2 c. pecan pieces

Stir butter and sugar into a paste. Stir in vanilla. Add flour and salt, stirring (with hands if you like) until absorbed into the paste. Incorporate nuts and shape dough into 16 balls. Bake on cookie sheet at 400° for 10 minutes, or until set; they may be very lightly browned on bottom, but not more browned than that.  Remove from cookie sheet. Roll in powdered sugar and place on serving platter.  Serve with earl grey tea.
