Betcha Can’t Eat Just One.

A fruitful visit to my sister’s house this weekend brings you these flour-free cookies. She put 1/2 cup of chocolate chips in hers, but I omitted them here.  I think it’s a perfect recipe for the peanut blossom cookies…you know with the chocolate kiss in the middle?  And with three ingredients, there’s almost no excuse to not make these cookies in a time crunch. Flour-Free Peanut Butter Cookies

1 cup creamy peanut butter
3/4 c. sugar
1 egg

Mix all in bowl until well incorporated. Shape into 20-24 balls and place all on cookie sheet. Make criss-cross pattern on top with a fork and bake at 375° for 10 minutes.
