No Mix, No Problem!

Whipping up pancakes when you have no pancake mix is a piece o’ cake. Except for the part where the kids just keep eating them right off the griddle, and you have to wait to get yours. Every once in a while, we have these for supper instead of breakfast. Try ‘em anytime. Recipe follows…

Fresh Is Good Pancakes

1-1/2 c. flour
1 tsp. baking powder
1 tsp. salt
1 T. granulated sugar
1 T. brown sugar
4 T. butter
1-1/4 c. milk
1/2 tsp. vanilla extract
1 egg

In a large bowl, blend flour baking powder, salt and sugars. Separately, in a 2 c. glass measuring cup, melt butter in the microwave for about 30 seconds. Whisk in the milk, vanilla extract and egg. Add this wet mixture to the dry mixture in large bowl, blending not beating.

Heat a lightly oiled skillet over medium-high heat. Pour 1/3 c. batter onto skillet and spread around a bit. Turn when bubbles appear on top lightly browned on bottom. Brown other side. Repeat with each pancake. (Add more oil to skillet as needed to prevent sticking.)
