Sauteed Asparagus N Crab Salad

Light and Filling.
It’s hard to feel guilty for eating a salad like this. Protein and soluble fiber don’t have to taste icky either. Don’t think I’ve turned over a new leaf or anything. I still love my sweets, but I actually had a healthy craving for once. Read recipe…
Sauteed Asparagus N Crab Salad
1 bunch asparagus, top 1/3 only cut off and rinsed
2 T. balsamic vinegar
1/4 tsp. celery salt
1/4 tsp. pepper
1 T. olive oil
Mix vinegar, salt and pepper in bowl. Toss asparagus in marinade until coated. Heat olive oil over medium heat and add asparagus only (not marinade). Saute over medium heat 4 minutes. Add marinade and saute another minute or two. Remove from heat and serve over bed of greens with crab, feta cheese, and your favorite vinaigrette.

I tried the asparagus on salad w/o the crab and I loved it! I don’t really care for crab, but I might try it with salmon! Thanks!

Great idea, April! Salmon would be tasty too.
