I keep sliced almonds on hand because I often use them for salads, but tonight, they would serve as a dessert ingredient. With relatively few ingredients and a speedy, hot microwave, I knew I could have candy in a matter of minutes. See the recipe…
Almond Brittle Microwave Candy
1 c. sugar
1/2 c. corn syrup
1/4 c. water
1 stick butter, slices into thin pats
1 c. raw sliced almonds
1/2 tsp. baking soda
Grease baking sheet with butter and set aside.
In a large glass bowl (2-3 quart), stir together water, corn syrup, and sugar.
Cook in microwave 2-1/2 minutes and stir — the sugar should be dissolved.
Cook in microwave 2-1/2 minutes and stir — the mixture should be boiling.
Stir in butter and put back in microwave 10 minutes and stir–mixture is thickening and starting to darken slightly (candy thermometer temp is 280°F).
Stir in almonds and return to microwave for 5 minutes until mixture is golden brown, temp is 305°F.
Stir in baking soda and empty mixture onto greased baking sheet, spreading around to desired thickness. Mine was about 1/4″ thick. Cool and break into pieces.
