Like Muffins, But Not.
Admittedly, there’s not much to this recipe, but that’s what makes it so perfect. I prefer them room temperature; it gives the flavor time to sink in. Just get a cake mix and some blueberries, frozen are okay, and mix up a quick batch for a twist on the good old blueberry muffin. See recipe…
Blueberry Muffcakes
1 box white cake mix
1 c. blueberries, rinsed and drained (thawed first, if frozen)
Make cake mix according to package directions. Fold in blueberries. Spoon batter into greased muffin tins and cook according to mix instructions on box. (Note: if you use cooking spray, make sure to wipe it from the top of tin before spooning in batter because it will make your cupcakes fall.)
Makes 12 jumbo, or 24 regular size cupcakes.
