Pina Colada Cakes
Pre-made shortcakes
Fresh sliced pineapple (I would NOT used canned)
Brown Sugar
Bananas
Coconut Ice Cream
Caramel Topping
Prepare pineapple by laying slices on broiler pan (or you can grill them). Sprinkle each slice with about 1 T. brown sugar and broil or grill 5-7 minutes. Place pineapple ring on dessert plate. Top with a pre-made shortcake. Hollow out shortcake (push down the middle of the shortcake with your fingers to make room for the scoop of ice cream). Slice some banana and layer over shortcake. Top with ice cream and drizzle caramel topping over the top.

Guy, to answer your question that you posed about making them ahead of time…You can grill the pineapple ahead of time and make the scoops of ice cream ahead of time & leave them in the freezer on wax paper. Other than that, I wouldn’t assemble until you are ready to eat for the best results.
