Best Banana Bread

Moist and Delicious.
One large loaf of banana bread. I left out the nuts, but everyone was nuts about it anyway. In fact, I hid it, and it was still gone before noon. Try the recipe…
Best Banana Bread
4 overripe bananas
1 c. sugar
1/2 c. melted butter, cooled
2 eggs, slightly beaten
2 c. flour
1 tsp. baking soda
1 tsp. salt
1 tsp. coconut (or vanilla or almond) extract
Mash bananas and sugar together until liquidy. Stir in butter and eggs. In a separate bowl, stir together flour, baking soda and salt. Slowly add dry mixture to wet mixture until blended. Finally, add the extract of your choice and pour into a greased (with shortening) 9X5X2.75 loaf pan. Bake at 350° for 1 hour, or until a toothpick in the center comes out clean.
Tips: If using a glass pan, lower the oven temperature to 325°. If the bread is browning too quickly, wrap with aluminum foil (shiny side out).

This banana bread was very moist, despite the fact that I didn’t have enough bananas

i’m dying to try this recipe but my oven is out of order. can i bake this in a microwave instead?

Isha- I am just not sure it would turn out. I am guessing it might overflow and not get done in the middle or bottom. But, I am a huge fan of trial and error. That’s how I come up with many recipes.
