One perfectly grilled leftover chicken breast turned to chicken salad for two. One of my favorite penny pinching inventions is the leftover makeover. Grilled Chicken Salad for Two

1 medium sized cooked, boneless, skinless chicken breast
1/4 c. light mayo
1 T. red wine vinegar
1 tsp. sugar
1/4 c. chopped pecans
1 medium-large strawberry, diced

Cut chicken breast into cubes. Combine the light mayo, red wine vinegar and sugar in a small bowl. Stir chicken cubes and diced strawberry into mayo mixture and serve on your choice of bread.
