These muffins are the perfect fall morning pick-me-up. Not too “pumpkinny” according to my friends and family. There is no such thing as too much pumpkin flavor, so I had to rely on their opinion for this recipe. If you are thinking that it sounds like too much trouble, let me just say…cake mix + pumpkin + eggs = easy pumpkin spice muffins.

Like Muffins, But Not.

Admittedly, there’s not much to this recipe, but that’s what makes it so perfect. I prefer them room temperature; it gives the flavor time to sink in. Homemade Made Quicker.

Supper is Over, Now What?

I am known for making dessert first, but tonight, I decided to prepare the dessert while supper was cooking. Popped my little cobbler in the oven before the meatloaf was out, and it was ready to serve by the time we were finished with supper.
